My Fish Pie Recipe

My Fish Pie Recipe

450g of mixed cleaned seafood/fish (white fish, prawns, mussels & squid rings)
1 piece of salmon steak
Brocolli – small to med head
500g floury potatoes
Butter
Milk
Salt and Pepper
1 small onion
1 Bay leaf
White wine

For the Sauce

300ml milk
30g butter
2 tablespoons of flour


Wash seafood and salmon. Fry sliced onions lightly for 1 minute in a little butter then add the milk, bay leaf and salt and pepper and mixed seafood/fish. Boil for around 10 minutes or until cooked, stirring to ensure it doesn’t stick.

Drain off the milk mixture into another pan and put seafood/fish mixture into a dish. Remove the bay leaf and discard it.

Cook salmon in microwave for a couple of minutes with a little water. Remove any skin and keep to one side.

Boil the broccoli so partly cooked but not soggy.

Peel and boil potatoes until soft and mash with milk and butter and salt and pepper.

Using a large ovenproof dish, line the bottom with the cooked mixed seafood then break up the salmon spreading equally all over the top of the seafood. Next put the pieces of broccoli over the salmon. Pour a little wine over this and allow to soak in.

Make the sauce by melting the butter in the pan, next stir in the flour to get a smooth paste, cook for a few minutes continually stirring. Remove from heat and then add the milk mixture saved from earlier (add more if you need it). Stir in the milk then put back onto heat and bring to boil. Add wine and salt and pepper to taste. Keep stirring to get a thicker sauce. Add grated cheese to sauce.

Pour the white sauce onto the fish and broccoli in the dish. Then grate cheese on the top of the sauce. Spoon the mashed potato onto the sauce and smooth it all over. Grate cheese onto the top and then cook in a preheated oven at 180 °C for approx 25 minutes or until top is browned and cheese melted.

You can substitute the broccoli with spinach or your choice of veg and/or add mushrooms, it all tastes good!!!!
